Rye Chia Berry Muffins (yield 1 dozen)

I had some blackberries in the fridge that must be used up, and wanted to bake with them in a “healthy” way. Some muffin recipes can really get up there in calories or just be filled with all things that are “not so good for you”.

So I searched for a few different recipes and none of them were jumping out at me. I found a reasonable recipe and modified quite a lot – to the point that it is now my own recipe. Sometimes it is a hit or miss when experimenting happens in the kitchen, but I am pleased to share this one was a success.

I feel like every experience I have had to date has prepared me for this pastry school experience. From high school foods class, to personal home baking experiences (and failures), chemistry, biology, math classes, and art too. These are all some of foundational skills of a Chef. Glorious Morning Muffins

This is a wonderful way to start the day, and perfect for a small breakfast. You don’t always have to make 12 muffins!  Simply leave the unused muffin cups dry, and if you accidentally grease add a little water so the pan does not burn during baking.

YIELD about 6-8 muffins (depending on the size you like!)
PREP preheat oven to 350F & prepare muffin tin

1/2 cup all purpose flour
1 tablespoon baking powder
1 teaspoon cinnamon
1/2 teaspoon baking soda
1/4 teaspoon salt

In separate bowl, WHISK:

1 egg
1/2 cup brown sugar
1/3 cup plain yogurt
3 tablespoons vegetable oil
1/2 tsp vanilla

MIX all together and ADD:

1/2 cup grated carrot
1 cup grated apple, peeled
1/4 cup dried cranberries or raisins
1/4 cup chopped nuts

Stir just until flour is blended, be careful not to over mix. Evenly distribute into prepared muffin tin and bake for about 25 minutes or until nice and golden brown.
